Sourdough Pizza Base

125 grams Sourdough Starter
480 grams strong white flour
285 grams water
1 tsp Olive Oil
1.5 tsp Salt

Mix all the ingredients together and form a rough dough taking care to keep the salt away from the starter. Let the dough rest for 30 minutes once it has made a rough dough.

Knead for 10 minutes. Dough should be soft and slightly sticky.
Cut into 2 (approx 450g) or 3 (approx 300g) equal balls and leave for 30 minutes to rest before covering with cling film and refrigerating for at least 1 day before use.

Consensus seems to be that the optimum flavour for a sourdough pizza base is achieved after 3 days of the dough resting in the refrigerator.

Allow the dough to rest at room temperature for 2 to 3 hours before forming the pizza base.

To freeze pizza dough, take the dough balls from the refrigerator after 2 days, wrap them in clingfilm and store them and store them in an airtight bag or tupperware box in the freezer. Thaw the dough for 24 hours in a refrigerator or 2-3 hours at room temperature before working into a pizza base.

Homemade Tomato Pizza Topping

Our favourite recipe for making our own tomato pizza topping based on a 400g can of tomatoes. Very quick to make; just put all the ingredients in a blender until it becomes a paste. The topping is suitable for freezing in portion sizes to suit your pizza. We use an ice cube tray to freeze them and then place them in an airtight freezer bag.

400g can of tomatoes drained
150g tomato paste
3 medium cloves chopped garlic
2 tablespoons olive oil
1 tablespoon pesto
2 teaspoons dried oregano
1 teaspoon honey
1 teaspoon salt
1/2 teaspoon crushed red pepper flakes
Fresh ground pepper to taste

Sourdough Pancake Mix

125 grams Sourdough Starter
100 grams plain white flour
175 grams milk
20 grams butter
3 eggs
Pinch of Salt

Whisk the eggs in a large bowl.
Add the sourdough starter, flour, milk and salt and whisk.
Melt the butter and add it to the pancake batter and whisk again before pouring into a hot, oiled pan to cook.
